The project examines the implicit relationship between food practices and gentrification processes in a neoliberal city. This study examines the ways in which one's personal preferences regarding food and urban space can contribute to the transformation of entire neighborhoods. In particular, the research examines the role of food trucks in the gentrification of an East Austin neighborhood from 2012 to 2020. The findings indicate that food trucks transform underutilized lots into active urban spaces, fostering a convivial and vibrant environment that attracts the creative class and increases property values. This study posits that culinary practices, and food trucks in particular, serve as a pivotal conduit in the gentrification process.
